Oatmeal Buttermilk Waffles

We often eat this for dinner since we do not have time for an involved breakfast during the week. It does require a bit of planning since you need to soak the oatmeal.



1 C uncooked old fashioned oatmeal

2 C buttermilk ( I buy fat free)

1/2 C white flour

1/2 C whole wheat flour

2 T. vegetable oil

2 tsp baking powder

1 tsp baking soda

3 egg whites



Serve with butter and syrup or fruit topping (strawberries or peaches)



Soak oatmeal in buttermilk 1/2 hour- 24 hours (I usually soak over night) in refrigerator. Add flours, oil, baking powder and soda, mix well. In separate bowl beat egg whites until stiff, fold into oatmeal flour mixture. Preheat waffle iron.



Per waffle without topping: Cal 177, Sodium 417 mg, Fiber 3 gram, Total fat 5 gram, Sat Fat 1 gram, Cholesterol 2 mg.
